Kev (Novalee) gave me lots of wild meat... this was a slab of Elk Porterhouse that I cut into 4 steaks. I seasoned with kosher salt and ground pepper... I grilled each side on high for 2 minutes... nice medium rare tender steaks!
I slow cooked a buffalo roast in mushroom soup. It was good... BUT....
... the next day I slow cooked it some more, then fried it briefly with a shitload of spicy BBQ sauce and added it to some Costco Chiabatta buns with banana peppers and blue cheese dressing... it was heaven on earth. A nice juicy BBQ southwest sandwich worthy of Montana's or Chili's... mouthfuls of tender, tangy, pull-apart meat... I will be making this again!!
